Foxtail millet laddus are a popular Indian sweet made with foxtail millets, jaggery, and nuts.

Benefits of Foxtail Millet-Laddu :

Rich in nutrients: Foxtail millets are a good source of iron, calcium, magnesium, dietary fiber, vitamins, and protein. The laddus become a good source of nutrition and energy when they are coupled with jaggery and almonds.

Using foxtail millets, jaggery, and nuts, foxtail millet laddu is a sweet Indian dessert.

Ingredients:
Foxtail millet, 1 cup
1 cup grated jaggery
0.5 cups ghee
a half-cup of chopped nuts (almonds, cashews, pistachios)
Cardamom powder, 1 teaspoon

Instructions:

Drain the water after rinsing the foxtail millet. In a pan, dry roast the millet until it is fragrant and light brown. Set apart for cooling.

Roast the chopped nuts in ghee in the same pan until they are golden brown. Set aside.

Use a mixer grinder to ground the roasted foxtail millet into a fine powder.

Grated jaggery and a little water should be added to a pan. Heat the jaggery over low heat until it melts and becomes a syrup.

Mix well before adding the foxtail millet powder to the jaggery syrup. Add roasted nuts, cardamom powder, and ghee. Stir everything thoroughly until it is all mixed.

Let the mixture to cool a bit. Then, scoop out little amounts of the mixture and roll it into balls.
