Idli Powder
Idly powder, also known as idli podi or milagai podi, is a flavorful and spicy condiment commonly used in South Indian cuisine. It is typically served as a side dish for idli, dosa, and other South Indian breakfast dishes.
Ingredients:
- Urad dal (black gram dal)
- Chana dal (split chickpeas)
- Red chilies
- Curry leaves
- Asafoetida (hing)
- Salt
Roast the ingredients on a dry surface until they emit an aromatic and golden brown color. Then, use a spice grinder or a mortar and pestle to crush them into a coarse powder.. You can change the amount of spiciness by adjusting the quantity of red chilies used.
Idly powder can be consumed in two ways: either as a sprinkle over idli or dosa topped with a few drops of oil or ghee, or as a paste that can be dipped in oil or ghee. It enhances the whole eating experience by giving the mild idli and dosa a wonderful, spicy, and nutty flavor.

How do you store podi?
Store it in a dry jar and use it. Serve Idli Podi with hot idlis / dosa .
