Red rice idiyappam flour is prepared using native rice varieties like Mappillai Samba, Poongar, Kattuyanam, Karunguruvai, or Navara. The rice is carefully processed to retain its natural quality and flavour.

This flour is ideal for making traditional idiyappam (string hoppers / nool puttu) and can also be used for other steamed dishes like kozhukattai.

Ingredients

  • 1 cup red rice idiyappam flour
  • Hot water (as needed)
  • Salt (optional)

Steps

  1. Add salt to hot water
  2. Mix the water into the flour gradually
  3. Knead into a soft dough
  4. Press through an idiyappam maker to form noodles
  5. Steam for 5–7 minutes
  6. Serve hot

  • With coconut milk and jaggery
  • With kurma or vegetable stew
  • With green gram or coconut chutney
  • As a light breakfast or dinner
