Ellu Podi Recipe | Easy Sesame Powder for Rice, Idli, and Dosa

Ellu Podi Masala Ingredients

To make ellu podi masala

  • 1 cup Sesame seeds
  • 2 tablespoons Channa dal (Bengal gram)
  • 1 tablespoon Urad dal
  • 1 tablespoon Coriander seeds
  • 2-3 Garlic cloves
  • 1 tablespoon Oil (preferably sesame oil)
  • 2-3 Dried red chilies (adjust according to spice preference)
  • 1 teaspoon Cumin seeds
  • Salt to taste

Instructions

1.In a pan, heat 1 tablespoon of oil on medium heat.Add the channa dal, urad dal, coriander seeds, and cumin seeds. Roast them lightly until they turn golden brown and release a nice aroma.Add the dried red chilies and continue roasting for another minute or two, ensuring the chilies don’t burn.Add the garlic cloves and roast for just about 30 seconds.

2.Finally, add the sesame seeds and roast them for a few minutes until they slightly brown, and the sesame seeds start popping.

3.Let the roasted ingredients cool down for a few minutes

4.Once cooled, grind the mixture into a coarse powder using a stone grinder, or in a food processor or mixer.

5.Add salt to taste and mix well.

6.Your Ellu Podi is now ready to be served!

This can be enjoyed with hot rice and ghee or with idli, dosa, or even as a seasoning for snacks.
