Ingredients:
- 1 cup Varagu millet / Kodo Millet
- 1 tablespoon oil (coconut or sesame oil)
- 1 onion (chopped)
- 1/2 cup mixed veggies (carrot, peas, beans, etc.)
- 2 garlic cloves (minced)
- 1-2 green chilies (optional)
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red chili flakes (optional)
- Fresh coriander (for garnish)
Steps:
- Start by cooking kodo millet according to the package instructions. Set it aside to cool.
- Heat oil in a pan or wok, and sauté chopped onions and garlic until fragrant.
- Add in your mixed vegetables and cook until tender.
- Add in the cooled Millet, soy sauce, vinegar, salt, and pepper. Stir well to combine.
