A wholesome and comforting one-pot meal, this Pearl Millet Vegetable Khichdi / bajra khichdi recipe brings together the earthy richness of bajra (pearl millet) and the vibrant flavors of fresh vegetables and spices. Packed with nutrition and perfect for a hearty lunch or dinner, it’s a simple way to enjoy the goodness of millets in a tasty, satisfying dish.
Ingredients
- 1 cup Pearl Millets (soaked overnight)
- 1 Onion, finely chopped
- 1 Tomato, chopped
- 1 Green Chilli, slit
- 1 tsp Ginger, grated
- ¼ Carrot, chopped
- 2 tbsp Green Peas
- 2 tbsp Capsicum, chopped
- 1 tbsp Oil
- ½ tsp Mustard Seeds
- ½ tsp Urad Dal
- Salt, to taste
- 2 tbsp Fresh Coriander Leaves, chopped
- 3¼ cups Water
Steps to make bajra khichdi recipe
- Prep the Millet: Wash and soak pearl millets overnight. In the morning, grind them lightly for quicker cooking.
- Tempering: Heat oil in a pressure cooker. Add mustard seeds and urad dal. Let them splutter.
- Sauté Aromatics: Add chopped onion, slit green chilli, and grated ginger. Sauté until onions turn translucent.
- Cook Veggies: Add chopped tomato and cook until soft and mushy. Then mix in green peas, carrot, and capsicum. Sauté for a minute.
- Add Water & Millet: Add salt to taste, pour in 3¼ cups of water, and stir in the ground pearl millet.
- Pressure Cook: Close the lid and cook for 1 whistle on medium heat.
- Finish & Serve: Once the pressure releases, open the cooker, mix well, and garnish with chopped coriander leaves.
