Recipe for Kattuyanam rice biryani:
- Heat oil and ghee in a heavy-bottomed pan or pressure cooker.

- Add ginger-garlic paste and slit green chillies. Fry for a minute.
- Add chopped tomatoes, red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala powder, and salt. Cook till the tomatoes turn soft and mushy.
- Fry the chicken pieces until they become golden brown.
- Add the yogurt and mix well.
- Add soaked Kattuyanam rice and water. Stir gently.
- Cover the pan or pressure cooker with a lid and cook on low heat for about 15-20 minutes, or until the rice cooks well.
- Garnish with mint leaves and coriander leaves.
- Serve hot with raita or any side dish of your choice.
