Kaatuyaanam Rice
A traditional rice type grown in the Tamil Nadu village of Kaatuyanam, India, is called Kattuyanam rice or Kattuyanam kuruvai.

Recipe for Kattuyanam rice biryani:
  1. Heat oil and ghee in a heavy-bottomed pan or pressure cooker.
  2. Fry the chopped onions until they are golden brown.
  3. Add ginger-garlic paste and slit green chillies. Fry for a minute.
  4. Add chopped tomatoes, red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala powder, and salt. Cook till the tomatoes turn soft and mushy.
  5. Fry the chicken pieces until they become golden brown.
  6. Add the yogurt and mix well.
  7. Add soaked Kattuyanam rice and water. Stir gently.
  8. Cover the pan or pressure cooker with a lid and cook on low heat for about 15-20 minutes, or until the rice cooks well.
  9. Garnish with mint leaves and coriander leaves.
  10. Serve hot with raita or any side dish of your choice.
