Navara ari / Navara rice that has been flattened  are called “Navara” or “Navara aval” or “red rice flakes” is a form of rice that is indigenous to Kerala, India. Because of its healing qualities, navara rice has long been used in Ayurveda medicine. In Telugu, we call it atukulu .

After parboiling the rice, it is shaped into thin flakes to create navara aval. After being sun-dried, the flakes are ready to be added as a simple and quick addition to many different cuisines.

Navara Aval Upma (Quick Recipe)

Ingredients

  • 1 cup navara aval
  • 1 onion (chopped)
  • 1 green chilli
  • Mustard seeds
  • Curry leaves
  • Salt as needed
  • Oil

 

How to Prepare

  1. Rinse aval lightly and keep aside
  2. Heat oil, add mustard seeds and curry leaves
  3. Add onion and green chilli, sauté
  4. Add aval and salt
  5. Mix gently and cook for 2–3 minutes
  6. Serve hot

 

Navara Aval Porridge (Comfort Meal)

Steps

  1. Cook aval with water or milk
  2. Stir until soft
  3. Add jaggery (sweet) or salt (savoury)
  4. Serve warm
