Urad dal flour, also known as “kali maavu” in South India, is a type of flour made from urad dal, which is a variety of black gram or black lentils. The dal is cleaned, roasted, and then finely ground to create a smooth, fine flour. Urad dal flour is commonly used in Indian cooking, particularly in South Indian cuisine, and it has a variety of culinary applications

The scientific name of black gram is Vigna mungo (black gram).

Ingredients : Black Urad dal, Raw Rice, Cardamom, Dry Ginger

Ingredients:

½ cup Urad dal Flour
¼ cup + 1 tbsp jaggery or karupatti powdered
3 tablespoons of sesame oil

Instructions:

  • Heat a pan with jaggery, half a cup, and 2 tablespoons of water.
    When it reaches a boil, add the powdered urad dal combination. Turn off the heat and whisk briskly.
  • Continue to whisk until the mixture is smooth. Add 1/4 cup of water again and stir well.
  • Restart the heating and add 2 more tablespoons of water. Continue to whisk over medium heat.
  • Mix in 1 tablespoon of oil at a time. Once cooked and all three tablespoons have been added, try touching the mixture with water-smeared hands; it should not stick to your fingertips and should resemble halwa.
  • Turn off the heat.
