Nutritional Value

Jaggery powder is a rich source of iron, magnesium, potassium, and other minerals, and also contains some vitamins. It has a relatively high glycemic index and is not recommended for people with diabetes. In a brief, Palm sugar is straightaway lower in glycemic index than jaggery and has moderate levels of potassium, iron, and zinc but does not contain any significant amounts of vitamins

How is Karuppatti  manufactured from palms?
Palm sugar in tamil – Sillu Karupatti or Panai Vellam- Jaggery is made from extracting the juice from palm trees, filtering and boiling the liquid to concentrate it, and then cooling and solidifying the juice to produce blocks. In a typical crusher, the juice is removed. It is then filtered and heated in shallow iron pans.

While jaggery palm is often marketed as a healthier alternative to refined sugar, it is still a sweetener that can affect blood sugar levels. Therefore, it is not recommended for diabetic patients to consume jaggery or any other sweeteners in large quantities.
